HOW OUR CENTRIFUGED COCONUT OIL IS MADE
Our Centrifuged coconut oil is made from fresh coconuts opened less than 48 hours after they are picked from the trees. They first shell the coconuts and then chop the flesh, placing it in an expeller press. The temperatures of the coconut flesh and the resulting coconut milk emulsion do not exceed 25° C (78.8° F) (room temperature). Once the coconut is shelled, it takes less than 45 minutes to produce the milk. The resulting coconut milk emulsion is then chilled slightly to 10° C (50° F) so that the oil will “pull out of solution.” In other words, the chilling helps to break the protein emulsion that holds the oils in solution. Next, the cooled milk, by use of a large centrifuge, is separated into the pure oil that we sell here and a “skim” coconut milk. This method of extraction requires no heat at all. It works like a cream separator that is used for separating cream from cow’s milk. It requires quite a few passes through this chilled centrifuge to obtain pure oil, but the resulting oil is absolutely fabulous.
TASTE
Our current centrifuged, virgin coconut oil is creamy and smooth when it is in a semi-solid state. It is completely clear like spring water when it is in a liquid state. It is pure white when it is in a solid state (like in the dead of winter, when we are all wearing winter coats and freezing our toes off). It has a very mild, light coconut taste. This oil consistently rates number one every time it is taste-tested.

LAURIC ACID
The one thing that sets this oil apart, even from our other oils, and definitely from all other virgin coconut oils is its high lauric acid content. Lauric acid is the fatty acid with 12 carbons in it, and has been the subject of much research in recent years. It is the major medium chain fat that has been studied by the National Institute of Health, Medical Doctors and Ph.D.’s doing medical research. It has mostly been studied, so far, for its anti-microbial, anti-viral and anti-parasitical properties. It is the lauric acid that becomes 2-monolauren in the gut. Most coconut oils contain 46-49% lauric acid, although some coconut oils test out as low as 42%. Our special centrifuged oil, unlike all the others, contains a whopping 57% lauric acid!! In addition, this coconut oil is higher in medium chain fatty acids than any other coconut oil we have seen, and it contains virtually no polyunsaturated fats.
Coconut Oil and Heart Health
While many people may be avoiding coconut oil and other tropical oils because of warnings about saturated fat, they may not have heard that recent scientific evidence separates natural, unrefined saturated oils from hydrogenated trans fatty acids. Long term epidemiological studies on communities who derive large portions of their calories from saturated fat from coconuts and coconut oils show no evidence of an increase in heart disease or any unfavorable cholesterol balance. These populations enjoy much lower rates of cardiovascular disease than most western countries, even though they consume large amounts of saturated fat and medium chain triglycerides from coconut oil. However, they consume little to no trans fatty acids from hydrogenated oils.
The FDA and the US Department of Health estimate that artificially hydrogenated trans fats, the type found in fast food, processed junk foods and pastries cause hundreds of fatal heart attacks every year. These are the dangerous saturated fatty acids that we should be limiting in our diet, not naturally pure, healthy coconut oil.
Only animal foods contain cholesterol, and coconut oil is a naturally cholesterol free food. Scientists have studied the effects of coconut oil consumption on different types of cholesterol and blood lipids. Coconut Oil & Metabolism
Medium-chain triglycerides (MCT’s) are commonly used in special nutrition formulas created for hospitalized patients. The medium-chain fatty acids in coconut oil are much different than the long-chain fatty acids found in seed oils. This difference affects how the body utilizes the oil. Because of the ease in how MCT’s are digested and metabolized, this oil can be used even when people have compromised digestive systems. The Centrifuge Extracted Virgin Coconut Oil just melts in your mouth with a nice mild coconut flavour. It has a very low moisture content and a very long shelf life.
Centrifuge Extraction Process
- This virgin coconut oil is not heated during any of the processes. It is made from non-hybridized, organic coconuts harvested and processed in the Philippines.
- If taste is the most important to you, and especially if you use the coconut oil raw, you will want this Centrifuge Extracted Virgin Coconut Oil. Our “most discrete customers who have very sensitive and discerning taste buds seem to prefer the Centrifuge Extracted Virgin Coconut Oil to all other virgin coconut oils.
